The original used whole chicken legs and thighs; our instructor always cut thigh meat into chunks, which cook faster and slurp up marinade more effectively. While the chicken and its accompaniments (capers, olives, garlic, marinade) roast, you'll make a tasty curried couscous to serve with the Marbella and soak up its juices. One of the most memorable and popular chicken dishes ever. Class fee includes food costs.
Your instructor for the evening will be Jan Zita Grover, a food-savvy San Francisco-born teacher/writer/historian/instructor/baker/chef who loves to teach others how to cook joyfully and improvisationally. She has cooked, catered, run a professional kitchen, and taught classes for 30 years.
