Experienced bakers know that nothing contributes more flavor to wheat doughs than long, slow fermentations. Happily, these also work very well for people with demanding schedules, because you prepare your dough and then give it a nice long sleep in the refrigerator—anywhere between 8 and 24 hours—until you are ready to bake it. Join Jan for an exploration of this lovely method of making sweet breads. You’ll prepare apricot braids and/or cardamon-almond braids in class, bring them home for their long nap in the fridge, and bake them when you want. Sample braids will be baked in class. Bring a 1/2-sheet pan to class to carry home your braids. Food costs are included in your class fee.
JAN ZITA GROVER has cooked, catered, run a professional kitchen, and taught classes for 30 years. An historian by training, she is particularly interested in the cuisine of other countries and the foods eaten by early settlers. Growing up in San Francisco, Jan was exposed to the food traditions of many Asian and European cultures. She loves teaching the basic techniques so people can improvise joyfully and skillfully on their own. In 2008, she created the “3 Days, 3 Ways” program of thrifty recipes for St. Paul's Mississippi Market.
