SoWashCo Online offers part or full-time online learning experience for students in grades 9-12.
Learn how a plant-based diet can improve health and protect the environment and animals. Participants will learn the primary health advantages of a plant-based diet especially for heart disease, diabetes, and obesity. Environmental and sustainability factors will be addressed. A discussion of animal welfare and agriculture will also be included. This class is for anyone interesting in learning about this lifestyle change. A crockpot of tasty food will be included for lunch.
Celeste Knoff and Steve Thompson will be co-teaching this class. Celeste Knoff has been plant-based since 1986. She is an RN and currently teaches nutrition to nursing students at a Inver Hills Community College. She is also a wife and mother of four kids, all of whom were raised in a plant-based home. Celeste is passionate about nutrition, wellness, and the environment and loves sharing food with others.
Steve Thompson is the current co-leader of PlantPure Communities' local chapter, Plant-Based Living TC. As a result of his own health transformation from changing his diet, his goal in retirement is to inform the general public of the importance of diet for health and provide community support for those working to change. He has a BS in Public Health Nutrition and is the Floor Coordinator for Flourish Food Shelf, the only plant-based food shelf in the Twin Cities.
