Apple Pies & Crostatas Celebrate fall apples with pies and open-face crostatas! You'll master making buttery, crispy crusts in class--that's guaranteed! And once you've fine-tuned your apple treasures in class, think about heading over to our local Afton Apple Orchard or even taking a short road trip to the U's Apple House in Victoria to select from a wide range of the U's star apples for more autumn baking. You'll make a small pie that can be completed in class in an aluminum foil pan. Techniques are fully transferable to your own home pans. We'll discuss how different pans transfer heat so you can avoid soggy bottoms. Food costs are included in your class fee.
Your instructor for the evening will be Jan Zita Grover, a food-savvy San Francisco-born teacher/writer/historian/instructor/baker/chef who loves to teach others how to cook joyfully and improvisationally. She has cooked, catered, run a professional kitchen, and taught classes for 30 years.
