Detroit Pizza - The Cheesiest!

There’s cheese in the dough, cheese on the dough, cheese surrounding the dough (frico—it’s fried!). There’s buttery, toasty bottom crust. Detroit pizza is the most over-the-top pizza you’re likely to make. In class, you’ll work with dough that’s ready to adorn and bake, and while the pizza sizzles in the oven,you can prepare your own dough for future bakes. If you want to do that, bring a 2-quart closed container to take home your dough. Extensive handout provided. Bring your appetite! Food costs are included in your class fee.

Janice Grover

JAN ZITA GROVER has cooked, catered, run a professional kitchen, and taught classes for 30 years. An historian by training, she is particularly interested in the cuisine of other countries and the foods eaten by early settlers. Growing up in San Francisco, Jan was exposed to the food traditions of many Asian and European cultures. She loves teaching the basic techniques so people can improvise joyfully and skillfully on their own. In 2008, she created the “3 Days, 3 Ways” program of thrifty recipes for St. Paul's Mississippi Market.
