Focaccia!

Spring 2026

Feather-light, deeply flavored, a canvas for painting with vegetables or a minimalist canvas for crunchy salt, a sprinkling of Parmesan, a trace of rosemary—your choice! Focaccia makes a great sandwich bread as well as a light meal alongside a green salad. Bring your own 8x8” uncoated aluminum pan, 8” cast-iron skillet, or use one of Jan’s pans to bake your focaccia in, along with a cardboard box or heavy paper bag to take leftovers home in. Extensive handout provided. Food costs are included in your class fee.

Janice Grover

JAN ZITA GROVER has cooked, catered, run a professional kitchen, and taught classes for 30 years. An historian by training, she is particularly interested in the cuisine of other countries and the foods eaten by early settlers. Growing up in San Francisco, Jan was exposed to the food traditions of many Asian and European cultures. She loves teaching the basic techniques so people can improvise joyfully and skillfully on their own. In 2008, she created the “3 Days, 3 Ways” program of thrifty recipes for St. Paul's Mississippi Market.
